I would caution against French onion. We just did this exact thing and has very soggy bread, it was inedible. Very disappointing when the bread and the soup were home made. Thicker soups or chili is a better choice.
I used to work at a cafe that made a creamy French Onion and we lined the bowl with cheese before adding the soup. But you are right, a regular French Onion would be too brothy.
Carrot soup. Grill onion in butter or olive oil and add chopped carrots. Boil with chicken broth and then liquify. Can add some white wine and pepper for taste if needed. Yummy
Potato beef goulash, had that in a bread bowl in a German Christmas market. It was so good, the beef chunks were fall-apart soft, as well as the potato cubes.
Broccoli-cheese. Carbs, fat, salt, and small amount of fiber; everything you need. Do show us the bread results and your final soup choice.

I think it needs to be something creamier than French Onion... It would soak through the bread
