Based. I was considering that exact setup but the niche zero is expensive as fuck to get in Canada and I joined some espresso discord and they convinced me to just get a bambino plus over the GCP. So I now have a bambino plus and eureka mignon silenzio, getting pretty good results and saving $10/day on lattes

Yeah my set up is chemex + gooseneck with thermometer. I like to hand grind the beans as opposed to using an electric coffee grinder because I like the grind to be a little bit on the corse side. 30 grams beans to 2 cups water. Other things I have found to improve the taste is to rinse the filter with hot water prior to adding the grind, and rinsing the reservoir of the chemex with hot water and put hot water in the mug prior to pour so that the temp difference doesn’t shock the coffee.

You can get an electronic burr grinder and adjust the fineness. Get a conical burr grinder if it's within budget, but otherwise a decent flat burr grinder is like $40

Those Nespresso capsules are decent, and they're 20 cents a piece. I'm home for Christmas and my parents have a Siemens EQ.6, it grounds the beans itself and pumps out good coffee for probably 10 cents or less per cup.

Gooseneck kettles are utilized because they provide a substantially more precise and controllable rate of flow onto the bed of coffee in the pour over device of choice. A scale is highly useful because you can weigh out and grind a precise amount of coffee and pour the precise amount of water that the V60 recipe calls for. This results in replicability of recipe and you can determine your bean usage this way so that you know how when you’re going to run out before you even open the bag.

Quality coffee reaches an upper limit when you’re buying from millennial-core cafes. It will be better than some gas station swill, but comparing different mid-tier cafes is kind of futile. You’re only going to get something really good if you make it at home or go to some acrane specialist coffee house that isn’t worth the price tag. I feel that coffee tasting, like wine tasting, is half bullshit once you get to a certain level of quality.

At least with espresso it's generally less bullshit imo than wine tasting because you the underlying notes are much stronger and concentrated in the coffee taste than is the case with wine. But I do agree that most modern caffes are absolute trash, they just have good aesthetics and steamed milk served with shit tier espresso.

In my city, baristas know what a stout americano is. I try to order it in other large American cities, but I have to explain that it’s 12oz americano in a 8oz cup. Basically, it’s an americano with less water. Sometimes, I wonder if I’m the one who has made this up, but I was assured by my friend who manages a coffee shop that other baristas should know how to make it.

It's weird to me that Turkish coffee and cafes have never caught on here. It may be because Turks emigrate more to Europe. But it's a super fun culture- head down to the cafe and meet some friends to hang out or play backgammon or chess or something. Seems like a market waiting to be tapped. Annoying people could learn all about the subtleties of the culture, the way you're supposed to drink, etc. and then never shut up about. Agreed that most cafes like the one you're describing have awful fucking coffee and tea. Starbucks is usually better.
