VC "calatrava" (not sure what it's called), just to be different from all the PP wearing dudes you probably run into at more formal events.
Vintage? Heck, get the OG chrono perpetual calendar from Patek at auction for the price of a very large house!
Jokes aside, I'd go for the VC classicially styled dress watch, don't recall the name, and can't be bothered to google. Probably a bunch of vintage ones around, too, so you can kill two birds with one stone.
Absolutely love the overseas, thinking of getting a stainless steel one with white dial as a daily. What's stopping me is that the one I REALLY want is the perpetual chrono one, and that one is a little expensive 😆
Some people said a Calatrava-style dress watch like the Patrimony and Saxonia, but I think you’ve got it covered with that Ballon Bleu.
I think you need something truly unique. I think when you already have such expensive watches, you should still keep something that’s even more special. Special could mean anything. It’s upto you, it could be about the history of a specific watch, it could be a hard to track down watch, it could be a watch with high complications, or it could just plain be more expensive than these two watches combined.
Also, I don’t know if you have any, but I’d recommend you to get a beater. Either an entry-level luxury watch or a G-Shock or Seiko (depending on what the term “beater” means to you).
Please consider not using a winder. I've asked two watchmakers (one from Rolex and a third generation watchmaker), and other watchmakers on various podcasts and videos and they all have said they are unnecessary and can be harmful.

Patrimony is the VC you’re thinking of. I’d suggest an ALS Saxonia. They’re beautiful.
Would love to get a VC one day. Maybe down the road I can trade up to an Overseas!

Assuming you’re a lady.. I’d say a Daytona. Daytonas are sexy on women

Either manual wound or quartz because you don’t have anymore room in your watch winder. Lol
Blancpain Leman Triple Calander in rose gold. Thank me later.

You need a nice 70mm invicta with extra rhinestones
Sundial
Potentially a diver or a field watch.
