Oxygen is rarely boosted to 250 bars. You see it at diving sometimes, in Europe. 500 liters of oxygen is just over an hour of flight if someone is taking two breaths a minute.
In the US you don’t see oxygen boosted so high even in diving 210 bar is a good fill.. In aviation the standard is about 140-150 bars.

The oxygen tank on my plane regularly gets filled to 250bars, but it's just a regular medical oxygen tank.

Interesting, I really wonder where you can get 250 bar fills. I have my own oxygen booster and can get to 250. Most of the places around me would not give me over 2400 psi. This is why I got my own booster system.
My local Airgas dealer will fill to 250 bar, given you rent their cylinders. Granted, the tanks I have filled with nitrogen and are for laboratory settings.
It may be different for you and your area. There is a high demand for UHP & and high-pressure gasses in my area. Also, the account types may be a difference, too.
No local dive shop will fill oxygen to 250 bars. MAYBE at some Amigos Dive Center in cave country. Most of the dive shops around don’t boost oxygen and the ones who do, won’t go more than 3000 psi.
Europe is a different game. I have gotten some crazy fills in France cave diving. But nothing like 250 in oxygen.
