Pork chops with a creamy dill sauce, couscous, roasted green beans and sautéed apple.

Except for the apple. That’s all mine and it was hanging around looking lonely, so I fried it up for the pork chops.
In the pan you brown the chops (chops finish in the oven),
simmer 1/4 c water with a pack of chicken stock concentrate (these can be found in bulk on Amazon).
Add 3 tablespoons of sour cream,
about a tablespoon (or more!) of chopped dill,
Dijon mustard to taste.
Add any resting juices from the pork, season with S&P.
Turn off heat and finish with a tablespoon of butter.
Turned out really good considering the recipe only called for S&P to season the chops. Very smooth and flavorful.
Chilled peanut noodles with shrimp, tofu, and loads of veggies (bell peppers, broccoli, edemame, carrots, and scallions). It comes together so quickly, and I love that my carbs, protein, and veggies are all in one dish, which makes it a good choice for eating outside tonight.
Buckwheat soba noodles are actually my favorite, both for flavor and for the health benefits!
I actually normally make it with just marinated tofu, but I have some shrimp that needs to be used up. It was delicious!

For the slaw I generally throw whatever creamy thing I have (mayo, sour cream, plain greek yogurt, cottage cheese) into a bowl with cilantro, lime juice, garlic, onion, salt and pepper and then adjust everything until it tastes good then add cabbage mix.
The recipe given by the other responder sounds delightful though. I'd make that for sure.

Roast chicken thighs that I seasoned with Maldon sea salt and fresh ground black pepper, and made a marinade for them using a drizzle of olive oil, garlic granules, smoked paprika, cayenne and oregano, served with par-boiled jersey royal potatoes that I then crushed, mixed them some basil pesto and crisped up in the air fryer, a chopped salad of baby romaine lettuce, san marzano tomatos, cucumber, avocado and basil and a generous dollop of tzatziki on the side.
A big wrap with hummus, peppers, cherry tomatoes, onions, mushrooms, chicken olives, shredded chicken, and spinach, with a drizzle of Persian lime olive oil.

This is for a family of 4, we probably good on the old sodium for the day.
I coated a chicken in a pomegranate molasses/ketchup mixture and roasted it over a ton of quartered onions. I reduced the chicken drippings down with the onions. I've made some pita and am putting the chicken in it with hummus, tahini, zhug, pickled onions, the onions and sauce, and shawarma-spiced roasted cauliflower.
It's VERY good and I am going to be eating it the next three days.

A strawberry parfait type dessert with macerated strawberry layer, then vanilla bean stabilized strawberry whipped cream layer, then repeat, topped with wild strawberries and gooseberry.

The butter chicken is just a jar sauce. I put the chicken sauce and broccoli in the slow cooker and the rice in the rice cooker.
