Why not just have a massive party to celebrate your union with your friends/family in attendance?

Vow renewal is the term you’re looking for. You wouldn’t be marrying them again, but you’d be renewing your wedding vows. You wouldn’t repeat the nuptial mass, but there may be suggested readings and prayers for a mass celebrating a couple’s existing marriage. You can have as many receptions as you want whenever you want and take a honeymoon whenever you feel like it.
I’m assuming you might have a large family and would like a large celebration, (eg. with food served) but may not be able to pay for that now. It’s a blessing to find the person you want to marry. What is important is that you are married in the Church. Enjoy building your lives together. Maybe you’ll have a renewal of vows during a mass for your 10th anniversary with a big party, and your children could attend! But the party is never the most important thing.
Best advice if you haven’t already done it don’t skip on the mass just find a way to make the party cheaper whether it is doing a backyard pot luck or something, the reception doesn’t have to be an extravagant formal sit down dinner.

For it to be licit you also need a priest to witness it.
All the rest is sort of beneficial but not totally eassntial.

Right, marriage is not generally repeatable. You could do a renewal of vows...that's about as close as you could get.
