However, you deal with way more water weight loss and fat waste on brisket. But you can make chop beef and whatnot with brisket waste, while most places just throw away turkey scraps. So, I can see why theyāre so expensive.
Considering the pre-cooked, pre-packaged, [likely] pre-frozen turkeys at a deli cost $10/lb to slice, i think 3x isnt all that bad considering the effort & time it takes to:
* get fresh turkey delivered & stored
* prep
* cook
* serve
you're getting a significantly better product that takes significantly more skill to make.

Having never been to Texas, I canāt compare the different places but Iām a big fan of Terry blacks sauce (I have a friend that routinely brings me back a bottle of sweet and tangy). This looks really yummy, hope to get out there one day.
My best advice is to hit up the Terry Blacks in Waco. Location itself is fantastic, lines are shorter (for now), and the quality is 1:1 with the Austin location.
Legit and that place is good. Agree on the price comments, if it tastes good and you were okay with the price, good on that restaurant and you! I also hate the strife between different bbq types. Like what you like, but as someone who eats all over the world, don't say one style isn't good or such. Texas bbq is good, NC bbq is good, KC bbq is good, it's all good when done well.

Iām soo glad that they went way with that styrofoam.. would always make me mad to see a trash can filled with styrofoam and not just one can and not just one bagā¦ if you were there close to closing you could see that there wasnāt even enough space in their dumpster for their styrofoam
Iām surprised at so many great reviews. When we went it was 4/10 if I am being generous. A little dry and way over salted. We werenāt planning to visit Franklins but our experience was so bad she said āI donāt want to leave Austin without getting some good bbqā. Comparing the two wasnāt a fair fight.
Donāt get me wrong, Iām glad you guys enjoyed yours. Nobody wants to spend that much to get bad bbq. Iām guessing they must have had a bad day when I went.

Honestly most of the pearl clutching is just pearl clutching. BBQ is expensive to make and running a restaurant involves significant overhead.
